02 - 1/2 cup almond butter or peanut butter
03 - 1/3 cup honey or maple syrup
04 - 1/4 cup unsalted butter, melted
05 - 1/2 teaspoon vanilla extract
06 - Pinch of salt
→ Homemade Gummies
07 - 1 cup 100% fruit juice, such as apple, berry, or orange
08 - 2 tablespoons unflavored gelatin
09 - 2 to 3 tablespoons honey or agave syrup
→ Mash-Up Toppings
10 - 1 cup freeze-dried fruit, lightly crushed (for example, strawberries or raspberries)
11 - 1 cup freeze-dried candy, crushed or chopped (for example, Skittles or marshmallows)
# How-To:
01 - Line an 8x8-inch baking pan with parchment paper, ensuring edges hang over for easy removal.
02 - Combine rolled oats, almond butter, honey, melted unsalted butter, vanilla extract, and salt in a large mixing bowl. Mix thoroughly until the mixture is fully incorporated, then press evenly into the prepared pan. Refrigerate until firm while preparing the gummies.
03 - Pour fruit juice into a small saucepan. Sprinkle unflavored gelatin over the juice and allow to hydrate for 5 minutes. Gently heat over low, stirring until gelatin is completely dissolved. Add honey or agave syrup and stir until blended. Pour mixture into a parchment-lined small baking dish. Refrigerate for 45 to 60 minutes, or until set.
04 - Once firm, cut homemade gummies into small cubes using a sharp knife.
05 - Retrieve oat base from refrigerator. Distribute homemade gummy cubes, freeze-dried fruit, and freeze-dried candy evenly over the surface. Gently press toppings into the base to adhere.
06 - Place the pan back in the refrigerator and chill for an additional 10 to 15 minutes to set toppings.
07 - Lift the snack mixture out using parchment paper. Slice it into 12 equal bars and serve.
