03 - 1/2 teaspoon granulated sugar

05 - 2 shots (2 fluid ounces) freshly brewed espresso
06 - 10 fluid ounces whole milk or oat milk
07 - 1 teaspoon honey or maple syrup (optional)
# How-To:
01 - Heat unsalted butter in a skillet over medium-low heat. Add thinly sliced onion, granulated sugar, and a pinch of salt. Cook, stirring occasionally, until onions turn deeply golden and caramelized, 12 to 15 minutes.
02 - Transfer caramelized onions and pan juices to a blender. Add 2 tablespoons of milk. Blend on high speed until mixture is thoroughly smooth. Strain through a fine-mesh sieve for a silky result.
03 - Brew 2 shots (2 fluid ounces) of espresso. Divide between two cups. Stir in 1 tablespoon of strained onion purée into each cup, mixing until well incorporated.
04 - Heat the remaining milk until steaming but not boiling. Froth the milk using a milk frother or whisk until creamy and foamy.
05 - Pour frothed milk over the espresso-onion mixture in each cup. Add honey or maple syrup for sweetness if preferred. Stir gently and serve immediately.
