# What You’ll Need:

01 - 2 packs instant ramen noodles (discard seasoning packets)
→ Sauce & Dairy
02 - 2 large eggs
03 - 60 ml grated Parmesan cheese (plus additional for serving)
04 - 60 ml heavy cream
05 - 15 ml unsalted butter
→ Meats (optional)
06 - 3 slices bacon or pancetta, diced (omit for vegetarian)
→ Flavor & Seasoning
07 - 2 cloves garlic, minced
08 - 2.5 ml freshly ground black pepper
09 - Salt, to taste
10 - 15 ml chopped fresh parsley (optional, for garnish)
# How-To:
01 - Bring a medium pot of water to a boil. Cook ramen noodles according to package directions without seasoning packets. Drain, reserving 60 ml of cooking water, and set noodles aside.
02 - In a mixing bowl, whisk together eggs, grated Parmesan, heavy cream, and black pepper until smooth.
03 - Over medium heat, cook diced bacon or pancetta in a large skillet until crispy. Remove meat, leaving 15 ml of fat in the pan. If omitting meat, add unsalted butter instead.
04 - Add butter and minced garlic to the skillet and sauté for about 30 seconds until fragrant.
05 - Add cooked noodles to the skillet and toss to coat evenly with the garlic butter mixture.
06 - Remove skillet from heat and immediately pour in the egg and cheese mixture. Toss quickly to coat noodles, adding reserved cooking water a tablespoon at a time to loosen the sauce as needed.
07 - Stir in crispy bacon or pancetta if used, then season with salt to taste.
08 - Serve immediately, garnished with additional grated Parmesan and chopped parsley if desired.
